- Crispy Pork Belly - Shatteringly crisp with chilli caramel and a bright Asian salad
- Burrata - Creamy Byron Bay burrata with grilled and marinated farm vegetables and herbaceous salsa verde, sourdough crisps.

- Chicken Supreme (gf) - Golden-skinned breast with bush tomato, lemon myrtle, tender broccolini, and pan jus
- Wagyu Beef Brisket (gf) - Slow-cooked wagyu brisket with fondant potato, silky carrot purée, and blackened shallots

- Eton Mess (gf) - Shattered meringue with macerated strawberries and clouds of Chantilly cream
